While we think this decaf is best prepared as a drip coffee, it will work in numerous settings like French Press or AeroPress. Decaf espresso anyone?
For our decaf coffees, we go the distance to ensure the same transparency and direct relationships we value in our regular coffees; and this is no easy feat as most decafs are sold as regional (or even countrywide) blends with little to no traceability. Mártir Coffee is an association of organic (or in transition to organic) producers based in the vereda of Alto Cañada, but extending as far as Itaibe, Cauca (which is just across the Cañón de Páez which divides Huila and Cauca). The 20 producers of Mártir show some of the most dedicated motivation that we've seen, which comes largely from the passion and skill demonstrated by their leader, Didier Javier Pajoy. Our importer has known Didier for a number of years now, and he helps us manage quality among this small group by helping them with the production of organic fertilizers and post-harvest processing. Unlike some associations, payments are made directly to the producers and not through a legal entity by which they're represented. This allows for maximum transparency to ensure producers are paid what they deserve.
